The 34-year-old has been struggling with a groin injury in recent weeks, but he is now illness.
Start physio Gunnvor Halmoy said: “Ole Martin is ill, and is not included in the squad to face Viking.
“Rune Nilssen and Erik Mykland are still out with injuries and unavailable for the game.”
Petter Bruer Hanssen has replaced Arst in the squad.
