The 28-year-old has signed a four-year contract with the Serie A side.
Donati joined Celtic from AC Milan in 2007, but fell out of favour with coach Gordon Strachan.
Bari has also recently signed midfielder Sergio Almiron and Yago Falque on loan from Juventus.
