Yakubu limped off after just 11 minutes into the game at Tottenham on Sunday.
Everton boss David Moyes said: “Yakubu’s record in the Premier League is normally 15-plus goals per season. For us to replace that will be incredibly difficult.
“Fellow striker James Vaughan is off to America for a knee operation, so to lose Yakubu too is a real blow for us.”
